“poularde pochee au lait” with brussel sprouts, musquee de Provence Pumpkin, K& J Orchard chestnuts, Mountain huckleberries, Australian black truffle. This was my least favorite dish of the night, and it’s totally a textural issue. The poached (or maybe it was sous-vided) chicken had the texture of a not quite cooked chicken, and it made it difficult for me to eat.
