I don’t even know what to tell you. I had planned on not canning as much as I did last year, for the simple fact that I am a hoarder and instead of eating my canned goods last winter, I just starred at them. Now look what I’ve done. And except for the apricot jam, all of the food I have canned came in my csa and would have gone to waste otherwise! Canning is such a dirty little habit for me. There is nothing more satisfying than creating a delicious pickle or jam, canning it to eat later, and then staring at the damn cans. I’m getting all hot and bothered just writing this! Here is why it rocks–I used to bake as a way to procrastinate and blow off steam. I used to give said baked goods to other people…and then I stopped. I became that bitch that would bring over a pie and taken home the leftovers, and then I stopped giving them away all together…with canning, you can’t really use it for at least a month, but I still get to see something, a finished product for all of my hard work. And there will come a time in a few months when I need something, and can save money because hey! I already made it and canned it this summer.
