Research has shown that people enjoy eating hot chile peppers because we have evolved to love eating painfully hot foods over the years. Humans are the ONLY mammals that enjoy eating painfully spicy foods.

    I love hot chilies, too and eat them regularly. A couple of weeks ago I canned a jar of jalapenos, and eat little bits of these daily. The heat (capsaicin) in chili is an oil and drinking water only tames the heat momentarily. Bread, tortilla absorb the oil, any dairy product (yogurt, sour cream, milk) and alcohol dissolve the oil and the relief, though not complete, is more satisfying.
