I decided to switch from comfort baking to comfort cooking. And nothing says comfort like giant wads of meat shoved with cheese and topped with a bit of Italian lovin in sauce form. This is the recipe I used, yes, from my food boyfriend Tyler?s arsenal. I saw him make it on Tyler?s Ultimate Meatball, and it kicks all kinds of ass. I stuffed these bad boys with fresh mozzarella, but the trick is to make sure they are evenly surrounded by the meatball, or the cheese will poop out and you?ll sit there wondering what the hell I was raving about. Please excuse my nappy, meat-drenched paw below.
I browned these bad boys, then covered them in a tomato sauce with garlic, onion, basil and red pepper flakes to let the meatballs finish cooking and impart their meaty goodness into the sauce. I love this action shot?look at the steam coming off of the sauce!
