more of my “I miss home” baking

more of my I miss home baking

Yup, I still miss home. This was back from my crazy baking days. I?m not gonna go into huge detail here, but this was toasted coconut bread I made from Tyler Florence?s Real Kitchen (apparently stolen from a Sydney restaurant I went to called bills), topped with local raspberry jam and chocolate coconut sorbet. This was my first attempt at chocolate sorbet, and I was pretty happy with the results. It was a simple syrup base (equal parts sugar and water, simmered together until the sugar dissolves) with chocolate and coconut milk. My chocolate didn?t melted 100% smooth, which affected the texture once I froze it, but I really liked the sorbet. It was almost like a coconut chocolate fudgesicle! Or a Jello Pudding Pop, minus the stick and cool Bill Cosby voice over.

That sorbet sounds fanTASTIC! You just pushed me one step closer to breaking down and buying an ice cream maker. Eating ice cream for dinner is the best part of being a grown-up.

Hell yea, Anna. This one was particularly good, like a giant fudgesicle! What I love about sorbet is you can make almost any flavor you want. I had the best baby pistachio sorbet out here in Adelaide, and it had a very intense flavor you just don’t seem to get in homemade ice cream.
