Sweet butter poached maine lobster with potato “glass”, cauliflower, brown butter-meyer lemon emulsion. Call me crazy, but I’m a much bigger shrimp fan than a lobster fan. I mean, its good, but it always tastes a bit, I don’t, watered down to me. Good dish, would have loved it even more with shrimp.
