The amuse bouche part 1: Melty Gruyere-filled gourgeres, or little puffs made from choux pastry. So cheesy. So delicious.
The first official course, Oysters and Pearls-Sabayon of Pearl Tapioca with Island Creek Oysters and white sturgeon caviar. Maybe it's the chives, maybe it's all the saltiness in the dish, but this rocked. I can see why it's a staple.
