The Smithsonian Museum of the American Indian in Washington has a cafe called Mitsitam, which focuses on Native American ingredients and cuisine. This is one of, if not the only, Native American-focused eatery in the country.

Amuse bouche: Hormone-free tilapia raised by convicts?

The Colorado Department of Corrections has launched a new program that has low-risk convicts raise hormone-free tilapia, and sell it to Whole Foods Market, which then sells the fish in 27 of their Intermountain stores.

Amuse bouche: 3-D Food Printer?

Scientists at Cornell University are developing a 3-D food printer that can work with various flavored food inks inserted into the printer by a syringe. That will mean that you could have an entire cooked meal for you at home without any more work than just printing from a printer. This sounds reminiscent of a dish chef Homaro Cantu used to do at Moto restaurant in Chicago, where he would print out sushi on edible paper with edible inks using a regular printer.

Amuse bouche: Internet Marketplace for home-cooked meals

Several companies have popped up around the world over the past year that offer an online shop to find and purchase locally-cooked meals made by professional and amateur chefs that may lack a restaurant. In 2009, BookofCooks launched world-wide, where “Consumers can search by city for the dish or food type they’re craving, or they can browse the site’s online Google maps and archives for links to local cooks and food aficionados, including ratings and reviews. When they find one that sounds good, they can place an order with the cook for pickup, delivery or even in-home preparation.” Recently, a Dutch company called Tweetjemee started offering the same service. Chefs get paid monthly after 30% of profits are sent to the company and 10% are sent to The Hunger Project.

Amuse bouche: Make your own ice cream machine

A Massachusetts-based company, MooBella, has created a machine that can make custom flavors of hard scoop ice cream in 40 seconds. Customers can choose between premium and low-fat ice cream, then from 12 flavors, followed by three mix-ins, like chocolate chips. There are 45 machines throughout the New England area, with plans on expanding to college campuses, airports and museums in the Northeast.

The hot dog has had an exciting history in Kansas City. In September 2009, the Kansas City Royals mascot Sluggerrrrr threw a hot dog into a fan’s eye and almost blinded him. Nothing like a little retina detachment to really get the crowd going for the home team!

Gastro Friday: The Twinkie diet works!

Do you think you could lose weight eating only sugary processed foods like Twinkies? According to nutrition professor Mark Haub from Kansas State University, you can, and you’re health might not suffer.

Haub performed a ten week experiment where he only consumed mini cakes, Dorito chips, sugary cereal and other junk food items. Occasionally he would eat vegetables, like a can of green beans, and he took a multivitamin every day.

Amuse bouche: Fast food marketing to kids on the rise

A new report released by Yale University’s Rudd Center for Food Policy and Obesity, looked at 12 popular restaurant chains, and out of more than 3,000 kids meal combos, discovered only 12 to be healthy. The study also revealed that food marketing toward children is on the rise. So far, only San Francisco has made strides in banning unhealthy kids meals at fast food restaurants.

According to a Gapers Block article, the guide has leaked their Chicago “bib gourmand” list, which features the top restaurants that offer two courses and a glass of wine for $40 or less. Amuse bouche:The end of pb & j sandwiches in school?

As food allergies become more common (4 out of every 100 children has a food allergy in the U.S.), schools have started considered banning the source, namely, peanut butter. Considering that the peanut butter and jelly sandwich is so iconic among Americans old and young, future banning of peanut butter at schools could change what our culture considers nostalgic.
